Notes From The Roaster

This coffee comes from the lush, high-altitude region of Santa Rosa de Copan, Honduras, where smallholder farmers carefully grow and harvest their cherries before bringing them together to create this beautiful lot. Nestled at around 1500 metres above sea level, this region is known for producing traditional varieties like Bourbon, Catuai, and Caturra. With generations of experience, the farmers in Santa Rosa de Copan take pride in their craft, working with meticulous care to ensure quality at every step.

In the cup, this coffee is pure comfort. Expect smooth chocolate, dried fruit, and a mix of nuts-think of it as the coffee equivalent of your favourite trail mix. The washed process highlights its clarity, making each sip feel clean and balanced while still rich and full-bodied. Whether you’re brewing it as a morning pour-over or enjoying it as a mellow afternoon pick-me-up, this coffee is easygoing and endlessly enjoyable.

This is our first time sharing a coffee from Santa Rosa de Copan, and we’re already smitten. It’s one of those timeless coffees that feels familiar yet special, with layers of warmth and depth that invite you back for another cup. If you’re looking for something smooth, satisfying, and versatile, this is the perfect choice.
