The San Carlos Estate from El Salvador is grown in La Libertad, at an altitude of 1,275 meters, under ideal growing conditions. The Red Bourbon variety undergoes a 12-hour fermentation followed by natural sun drying, which results in a profile with notes of chocolate fudge.
