This is James Hoffmann’s highly popular "Japanese-Style" Iced Filter Coffee recipe. Instead of steeping coffee for hours like cold brew, this method brews hot coffee directly over ice using a pour-over cone (like a Hario V60).

The secret to this recipe is replacing a portion of the hot brewing water with ice. The hot water extracts the bright, complex, and fruity aromatic notes of the coffee, while the ice instantly chills and dilutes it to the perfect strength without letting those flavors degrade.

The Formula & Ratio

This recipe uses a standard 1:15 ratio, scaling down the total hot water to account for the ice cubes in the server.

  • Coffee: 30g

  • Total Liquid/Ice: 500g (divided into 200g ice and 300g hot water)

What you need

  • Pour-Over Dripper: Hario V60 (or similar) with a rinsed paper filter.

  • Coffee Beans: 30g (Ground slightly finer than your usual pour-over setting to compensate for the faster brew time and less water).

  • Ice Cubes: 200g (Placed directly inside your carafe/mug).

  • Hot Water: 300g (95°C–98°C).

Step-by-Step Brewing Guide

  1. Prep the Vessel: Weigh 200g of ice into your carafe or rinse-safe server. Place your dripper with the rinsed filter on top, add your 30g of finely-ground coffee, and tare your scale to zero.

  2. The Bloom: Pour 60g of hot water over the grounds. Give the brewer a gentle swirl to ensure all the coffee is wet, and let it bloom for 45 seconds.

  3. The Main Pour: Slowly pour the remaining hot water in steady concentric circles until your scale reads 300g.

  4. The Final Swirl: Give the dripper one last gentle swirl to keep the coffee bed flat as it draws down.

  5. Chill and Serve: Once the coffee has completely drained, remove the dripper. Swirl the carafe for a few seconds until the remaining ice cubes have almost completely melted and the coffee is perfectly chilled.

Pour over fresh ice into a glass and enjoy immediately. It yields an incredibly clean, vibrant, and crisp iced coffee that beautifully highlights many fruity or floral notes.
